Chocolate Mousse Tart
For the base:
1 cup pecans
1 cup pitted dates
Pinch of salt
In a food processor combine all ingredients until fine and crumbly. Press with damp hands or a dessert spoon into a tart tin with removable bottom. Place in the freezer until ready to fill.
For the mousse:
2 very ripe avocados
1 1/2 cup cacao powder
1 1/2 cup maple syrup
1-2 tsp vanilla essence
2 tbsp melted coconut oil
A dash of almond milk to loosen the mix if necessary
Raspberries for topping
Food process all ingredients (except the raspberries) until the mix is thick but very smooth. Taste test frequently (yes, absolutely) to achieve the desired consistency and intensity of flavour. Loosen the mix a little with almond milk if it seems too thick and sticky.
Spread into tart crust and refrigerate until ready to serve. When serving, top with fresh raspberries.
Note 1: Dates are neutral in thermic nature, they are sweet and supplement Blood and Yin.
Note 2: Avocados have a thermic cooling nature. With a sweet flavour in Chinese Dietetics, avocado builds Blood and Yin, harmonises the Liver Qi and lubricates the Lung and Large Intestine
Note 3: Cacao is a source of Magnesium. It has a bitter sweet flavour and is used to stimulate the Fire (Heart and Small Intestine) Element.
